When Corry and Darryn found out Archie, their one-year-old son was allergic to gluten, dairy, egg, and nuts they wondered what on earth he would eat. At the time they lived in a small city where allergy-free ingredients were hard to come by and very few of the books and blogs they researched covered all four allergies.
‘I remember going through the largest supermarket in town and finding only a handful of things he could eat,’ said Corry. ‘We found it pretty hard, and we really wanted our son to grow up enjoying food.’
Preparing main meals was straightforward—with lots of fresh vegetables, fruits and meats. But desserts and baking were another story, so Corry and Darryn began to experiment.
A few years later, Corry met Nicole at a local painting class. Each week Nicole brought a plate of gorgeous vegan cakes to share and one evening Corry took some home for Darryn to try.
‘They were wonderful,’ Darryn said. ‘As I stood in the kitchen late that night, eating this fantastic cupcake, I wondered…if we combined our knowledge, we could create allergy-free cakes that looked and tasted as good as any other cake.’
So together, they experimented, and in the mix The Good Cake Co. was born. Corry, Darryn and Nicole simply wanted people with the top four food allergies to be able to eat good cakes, like the rest of us.
And now they can.
The Good Cake Co. is a little different. We don’t have a shop and at this stage we are not planning to open one. We rarely cater for events—taking on just a few each month. We do sell our cakes, but you have to be quick, as we only accept a few orders each week.
Our real passion is innovation. We love to try new things rather than baking hundreds of the same cakes each week. Our aim is to inspire people by sharing our allergy friendly creations and our recipes.
We have just released our very first cookbook, LET THEM EAT GOOD CAKE. You can get it here. We hope you like it.
We are in Sydney, Australia and love it!
